| Spicy Fried Cabbage | 
       1/2 large and firm cabbage
4       tablespoons cooking oil
1    large onion, sliced finely
3    fresh red chilies, seeded and sliced
   3       cloves garlic, grated finely
1       teaspoon fresh ginger, grated finely
1       teaspoon ground turmeric
2       tablespoons desiccated coconut
   Salt to taste
              Method :
   Shred the cabbage coarsely. Heat a wok    with oil and saute the onion and chilies until the onions are soft. Add    garlic and ginger, fry stirring until golden. Add cabbage and turmeric,    fry and toss the cabbage in the mixture. Then cover         and cook over low heat for 10-15 minutes or until cabbage is tender but         not too soft. Sprinkle with         salt and mix well. Add coconut         and stir to mix thoroughly. If there is         any liquid in the bottom of the pan, lift cover off and stir over medium         heat until all liquid is absorbed. Serve as an         accompaniment to white rice and meat curries.
