Quiche

Quiche
 

Ingredients
  • Readymade puff pastry 8 ounces
  • Potato peeled, cut in cubes and boiled 1
  • Carrot 2 cut and boiled
  • Sweet corn1 cup
  • Capsicum 1 cut in cubes
  • Spring onion 1 finely chopped
  • Mushrooms 4 sliced
  • Chicken tikka chunks 1 cup
  • Butter 1 tbsp
  • Hung curd 1 cup
  • Milk 1 cup mixed with 1 tbsp flour
  • Salt 1 tsp
  • Black pepper crushed 1 tsp
  • Crushed red pepper ½ tsp
  • Mustard powder 1 tsp
  • Cheddar cheese grated ½ cup
  • Eggs 3
Method
  • Heat butter sauté green onion add chicken tikka chunks with all the vegetables, salt, black pepper, crushed red pepper, mustard powder, mix well and remove. Grease your 9 inch pie plate, line with rolled puff pastry, bake blind on 200 degree C for 15 minutes, remove add in your filling, mix together hung curd, milk and flour mixture, grated cheese, eggs, pour mixture evenly on filling, bake on 200 degree C for another 30 minutes till firm and set.

Chicken moskova


Ingredients
  • Chicken breast 2 boneless flatten
  • Salt ½ tsp
  • White pepper½ tsp
  • Garlic paste ½ tsp
  • Vinegar 1 tbsp
  • Egg 1 beaten
  • Milk 2 tbsp
  • Fresh bread crumbs 1 cup
  • Cheddar cheese grated ½ cup for filling
  • Cream cheese cubes for filling 2
  • Mushrooms finely chopped 3
  • Parsley finely chopped 1 tbsp
  • Cole slo salad to serve
  • Mashed potatoes to serve
  • Honey mustard to serve
Method
  • Marinate chicken breast with salt, white pepper, vinegar, garlic paste, fill with creamy cheese and mushroom filling, seal as shown, dip in beaten egg and milk mixture, roll in fresh bread crumbs, deep fry to a crisp light golden brown, serve with Cole slo salad, honey mustard sauce and mashed potatoes.

Lasagna parcel

Lasagna parcel


Ingredients for mince filling
  • Oil ¼ cup
  • Crushed garlic 1 tbsp
  • Chicken ½ kg boneless finely cubed
  • Salt 1 tsp
  • Vinegar 1 tbsp
  • Sugar 1 tsp
  • Crushed black pepper 1 tsp
  • Crushed red pepper 1 tsp
  • Oregano leaves 1 tsp
  • Tomato paste 4 tbsp
Ingredients for white sauce
  • Butter2 tbsp
  • Flour 2 tbsp heaped
  • Milk 2 cups
  • Salt ¼ tsp
  • White pepper ¼ tsp
  • Mustard ¼ tsp
  • Lasagna strips boiled 12
  • Crushed red pepper 1 tsp
  • Crushed black pepper 1 tsp
  • Cheddar cheese 1 cup
Method for filling
  • Heat oil fry crushed garlic till light golden add finely chopped chicken, cook until done, add in salt, sugar, vinegar, crushed black and red pepper, oregano leaves, fry well add in tomato paste, mix well and remove. Cool, grease your oven proof dish make parcel by putting 2 lasagna strips in cross, fill with filling, fold like parcel, put in a greased dish, top with prepared white sauce, grated cheese, sprinkle butter, oregano leaves, crushed red pepper, bake for 20 minutes until light golden.
Method for white sauce
  • Put all the ingredients in the pan, cook until thick, stirring all the time.

Ingredients for pan cake
  • Flour 1 cup heaped
  • Salt ¼ tsp
  • Eggs 2
  • Milk ½ cup
  • Water½ cup
Ingredients for cheese sauce
  • Butter 3 tbsp heaped
  • Flour 2 tbsp heaped
  • Milk 1 ½ cup
  • Water ½ cup
  • Cream ½ cup
  • Salt ½ tsp
  • White pepper ½ tsp
  • Cheddar cheese 2 tbsp
Ingredients for pasta sauce
  • Oil 2 tbsp
  • Onion chopped 2 tbsp
  • Garlic chopped 1 tsp
  • Tomato puree ½ cup
  • Salt ½ tsp
  • Black pepper ½ tsp
  • Oregano leaves ½ tsp
  • Sugar 1 tbsp
  • Orange food color pinch
Ingredients for filling
  • Chicken breast 3 cut into ½ inch tiny cubes
  • Oil 3 tbsp
  • Flour1 tbsp heaped
  • Onion 2 tbsp chopped
  • Garlic paste ½ tsp
  • Oregano leaves ½ tsp
  • Tomato paste 2 tbsp
  • Salt ¾ tsp
  • Black pepper ¾ tsp
  • Mushrooms thinly sliced 6
  • Fresh cream ½ cup
  • Finely chopped parsley 2 tbsp
Ingredients for topping
  • Cheddar cheese ½ cup
  • Parmesan cheese 1 tbsp
Method for pan cake
  • In a bowl mix together 1 cup flour, ¼ tsp salt, 2 eggs, ½ cup milk and ½ cup water, mix into a smooth pourable consistency batter, sieve it grease non-stick frying pan, put spoon full of batter, spread evenly, cook on one side only, when it leaves the side, remove. Make thin pan cakes and keep aside till we make the filling.
Method for filling
  • Heat 3 tbsp oil add 2 tbsp chopped onion fry for 2 minutes, add ½ tsp garlic paste, 3 chicken breast finely chopped, 1 tbsp flour, ¾ tsp salt, ¾ tsp pepper, 2 tbsp tomato paste, ½ tsp oregano leaves and half cup water, cook till chicken tender and mixture thick, remove add ½ cup cream, 2 tbsp chopped parsley and 6 sliced mushrooms, cool filling, spread 1 tbsp heaped filling into each pan cake, roll firmly, spread in a large greased oven proof dish, spread with pasta sauce, cover with cheese sauce, again drizzle 2 tbsp pasta sauce on top, top with grated cheddar and parmesan cheese, grill for 10 minutes till top light golden.

Ingredients for brownies
  • Butter 4 ounces
  • Caster sugar 1 cup
  • Egg 2
  • Flour ¾ cup
  • Coco powder 3 tbsp leveled
  • Salt pinch
  • Baking powder ½ tsp
  • Walnuts ½ cup chopped
Ingredients for filling
  • Cream cheese 8 ounces
  • Chocolate chips ½ cup
  • Mix fruit cocktail 1 tin
  • Vanilla essence ½ tsp
  • Icing sugar 4 tbsp
  • Whipped cream 1 cup
Method

  • In a sauce pan cook together butter, coco powder and sugar on very low flame for 1 minute, beat in 1 egg at a time, fold in walnuts, vanilla essence, sieved mixture of flour, salt and baking powder, mix well, spread in a greased 10 to 12 inch pizza plate, bake on 180 degree C for 20 minutes, cool on wire rack.
Method for filling 
  • Cool brownie, in a bowl beat cream cheese, sugar, vanilla until smooth fold in whipped cream, spread over brownie crust, top with fruit cocktail, chocolate chips, refrigerate 2 to 3 hours before serving.

Ingredients:
  • Green chilies 15
For Batter Ingredients:
  • Flour 4 tbsp
  • Corn flour 3 tbsp
  • Rice flour 2 tbsp
  • Salt ¼ tsp
  • Chilled milk ½ cup
  • Egg 1
Ingredients for filling:
  • Cream cheese ½ cup
  • Vinegar 2 tbsp
  • Mayonnaise 2 tbsp
  • Crushed red pepper ½ tsp
  • Bread crumbs as required
Method:
  • Give slits on green chilies and remove the seeds.To make the batter mix together the cream cheese, mayonnaise, vinegar and crushed red peppers. Fill this mixture into the green chilies. Dip in batter and roll twice in bread crumbs.Chill for ½ an hour. Then deep fry till they turn light golden in colour..

Ingredients
  • Boiled and mashed potatoes ½ kg
  • Salt ½ tsp
  • Black pepper ½ tsp
  • Chicken powder ½ tsp
  • Cream 1 tbsp
  • Cheddar cheese grated ½ cup
  • Green chilies chopped 3
  • Cream cheese 5 tbsp
  • Spring onion leaves finely chopped ½ cup
Ingredients for coating
  • Flour 1 cup
  • Eggs 2
  • Bread crumbs as required
Method
  • Mix all the ingredients except cream cheese in potatoes, take a portion of potatoes mixture in your palms, place a tsp of cheese in between, roll to form a ball, roll in flour, dip in beaten egg, finely roll in crumbs and deep fry.

Ingredients
  • Mushroom 1 tin coarsely sliced
  • Salt ½ tsp
  • Garlic paste 1 tsp
  • Butter 1 tbsp
  • Oil 1 tbsp
  • Mixed herb 1 tsp
  • Parsley 1 tbsp
Ingredients for cheese sauce
  • Butter 1 ounce
  • Corn flour 2 tbsp
  • Salt, white pepper mustard ½ tsp each
  • Cheddar cheese ½ cup grated
  • Mozzarella cheese 2 tbsp grated
  • Milk ½ cup
  • Cream 2 tbsp
Method
  • Heat butter and oil in a frying pan, sauté garlic, add mushroom with salt and mixed herbs, fold in parsley and remove. Make creamy cheese sauce, fold sautéed mushrooms in the sauce, spread in oven proof dish, top with mozzarella grated, grill for 8 minutes till cheese melts, serve hot with garlic pizza bread.

Ingredients
  • Cream cheese 4 tbsp
  • Mayonnaise ½ cup
  • Chicken boiled and chopped 2 cups
  • Whipped cream 2 tbsp
  • Fruit cocktail 1 cup
  • Apple 1 medium chopped
  • Salt and black pepper ½ tsp each
  • Caster sugar 1 tbsp
  • Flaked almonds toasted 2 tbsp for garnish
  • Salad leaves for garnish
Method
  • Beat cream cheese and mayonnaise in a large bowl, add in seasonings and all the rest except almonds, mix slightly, spoon onto lettuce, cover plate, sprinkle with toasted almonds and serve chilled.

  • Pineapple jell-o 1 packet
  • Cream 1 cup whipped
  • Cottage cheese 8 ounces crumbled
  • Fruit cocktail 1 cup
  • Condensed milk 4 tbsp
  • Almonds and pistachio sliced 2 tbsp
Method
  • Beat cottage cheese until smooth, add cream with jell-o crystals and beat. Also add condensed milk, fold in fruit cocktail and nuts, serve chilled in short glasses.

Ingredients for cheese cake mix
  • Egg 1
  • Cream cheese 100 gm
  • Caster sugar 2 ounces
  • Vanilla essence 1 tsp
Ingredients for brownie mixture
  • Plain chocolate 5 ounces grated
  • Butter 4 ½ ounce
  • Brown sugar 6 ounces
  • Eggs 2
  • Flour 3 ounce
Method
  • Preheat oven to 160 degree C grease and base line 8 inch square shallow pan, to make the cheese cake mixture, put all the ingredients in to bowl and beat well for 2 minutes, keep aside, to make the brownie mixture melt butter and chocolate together in a microwave for 1 minutes, remove add in sugar add the beaten eggs little at a time beating well and gently fold in the flour, spread 2/3 of the brownie mixture in the base of the tin, spread the cheese cake mixture on top, spoon the remaining brownie mixture on top in heaps using a knife swirls the mixture together bake for 30 minutes, leave to cool, cut into squares.

Ingredients for base
  • Digestive biscuits finely crushed 2 cups
  • Melted butter 4 ounces
Method for base
  • Crush biscuits mix with melted butter, press in an 8 inches pie plate, keep aside, preheat oven to 150 degree C.
Ingredients for filling
  • Condensed milk ¾ cup
  • Curd cheese ½ cup heaped
  • Lemon juice 2 tbsp
  • Lemon zest 1 tsp
  • Flour 1 tbsp heaped
  • Eggs 3 separated
Method for filling
  • In a bowl beat together condensed milk, curd cheese, flour, lemon juice, lemon zest, egg yolks until thick, beat egg whites stiff, fold in the mixture, pour mixture onto the biscuit base, bake for 35 to 40 minutes in a preheated oven 150 degree C until filling firm, cool and decorate of swirls of fresh cream.

Ingredients
  • Square crackers 1 packet
  • Pizza sauce ½ cup
  • Cheddar cheese ½ cup
  • Mozzarella cheese 1 cup
  • Olive slice 3 tbsp
  • Onion chopped coarsely 1
  • Tomatoes seeds removed and chopped 1
  • Capsicum chopped in to cubes 1
  • Oregano to sprinkle
Ingredients for pizza sauce
  • Pizza sauce 1 cup
  • Cream cheese 4 tbsp
  • Cream 2 tbsp
  • Green chilies chopped 2
  • Crushed red pepper 1 tsp
  • Chicken powder 1 tsp
  • Crushed garlic 1 tsp
  • Oil ¼ cup
  • Onion 1 chopped
Method for sauce
  • Heat oil, sauté onion and garlic then add all the ingredients except cream cheese and cream, cook for 10 minutes and remove. Add cream and cream cheese, mix well. Serve with pizza squares.
Method for squares
  • Spread pizza sauce on each cracker top with cheddar cheese, onion, tomato, capsicum then both the cheese, sprinkle oregano, bake for 7 to 8 minutes until cheese melts.

Ingredients for base

  • Digestive biscuit 200 gm
  • Butter 100 gm melted
Ingredients for cheese cake filling
  • Cream cheese 200 gm
  • Whipped cream 300 gm
  • Caster sugar 4 tbsp
  • Butter scotch essence 1 tsp
  • Gelatin 2 tbsp
  • Nuttela ½ cup
  • Ceramal sauce ½ cup
Ingredients for ceramal sauce
  • Brown sugar ½ cup
  • Butter 2 ounces
  • Cream ½ packet
Method
  • Cook altogether till thick.
Method
  • Make base with biscuits, chill until firm.
For filling
  • Dissolve gelatin, beat cream cheese with caster sugar, nuttela add butter scotch essence, fold in whipped cream, gelatin and ceramal sauce 3tbsp , put to set until done, remove, spread with remaining ceramal sauce, put to set decorate with piped cream.

Ingredients for base
  • Digestive biscuits crushed 2 cups
  • Walnuts ½ cup crushed
  • Butter melted 4 ounces
  • Method for filling
  • Cream cheese 200 gm
  • Curd cheese 1 cup
  • Gelatin 1 ½ tbsp
  • Water ¼ cup
  • Cream whipped 400 gm
  • Icing sugar 4 ounces
  • Blueberry essence ½ tsp
  • Blueberry pie filling 1 can
Method for base
  • Crush biscuit mix with walnuts and butter, spread in a 8 inch loose bottom pan, bake for 15 minute, remove and cool.
Method for filling
  • In a bowl beat cream cheese, curd cheese, add in dissolved gelatin, fold in 1 packet of whipped cream with icing sugar, add in the blueberry pie filling tin. lightly swirls to give it a marble effect. Put over biscuit base, chill until set. Decorate with remaining whipped cream.

Apple cheddar pie


Ingredients
  • Flour 2 ½ cup heaped
  • Salt ½ tsp
  • Shortening ½ cup
  • Chilled Butter 2 ounce
  • Cheddar cheese ½ cup
  • Chilled water to knead dough
Ingredients for filling
  • Apples 4 peeled, poured and cut into ¼ inch thick wedges.
  • Pineapple syrup 1 cup
  • Corn flour 4 tbsp
  • Caster sugar ½ cup
  • Lemon juice 2 tbsp
  • Cinnamon powder ½ tsp
  • Butter 2 tbsp
  • Cheddar cheese 4 tbsp
Method for filling
  • In a sauce pan heat pineapple syrup, stir in the corn flour and the cinnamon, string until thick, in a bowl mix apples, sugar, lemon juice and salt, mix in the prepared pineapple syrup, pour the filling in a deep greased casserole dish, top with butter and cheddar cheese, Prepared the dough. Mix together all the dry ingredients including cheese, start mixing in the butter and shortening until mixture resembles bread crumbs. Add in chilled water little at a time until dough is formed. Roll out the dough into the shape of dish and carefully place it on the top of apple filling, seal edges, brush with beaten egg, and bake in a preheated oven on 180 degree C for 30 minutes. Serve hot with vanilla ice cream.

Ingredients
  • Butter softened 3 ounces
  • Oil ¼ cup
  • Caster sugar 1 cup
  • Vanilla essence 1 tsp
  • Coffee 2 tsp
  • Eggs 3
  • Flour 2 cups
  • Milk 2/3 cup
  • Thick curd 1/3 cup
  • Vinegar 1 tsp
  • Baking powder 2 tsp
  • Baking soda ¼ tsp
Ingredients for frosting
  • Cream cheese 4 ounces (cubes)
  • Whipped cream 1 cup
  • Butter 4 ounces
  • Icing Sugar 1 cup
  • Coffee 1 tsp
  • Milk 1 tbsp
  • Coco powder to dust
Method
  • In bowl sieve together flour, baking powder, baking soda add in 1 cup sugar, mixes in butter, keep aside. In another bowl beat eggs, milk, yogurt, coffee, vanilla essence, vinegar and oil for 2 minutes. Pour this mixture in the dry ingredients, beat slightly, pour in muffin tray in cup cake liners, and bake at 180 degrees for 15 minutes. Remove, cool, pipe with frosting.
Method for frosting
  • Beat cream cheese adding in butter and icing sugar, add dissolved coffee, fold in whipped cream, fill the cream in piping bag and pipe rossets on top, dust with coco powder and serve. Before frosting soak the cup cakes with coffee syrup.
Ingredients for soaking syrup
  • Water 1 cup
  • Sugar ½ cup
  • Coffee 1 tsp
Method
  • Cook till dissolve.

Ingredients
  • Boneless chicken ½ kg
  • Onion 1 large
  • Turmeric ½ tsp
  • Chili powder ½ tsp
  • Water 2 cups
  • Tomatoes 2
  • Ghee 2 tbsp
  • Yogurt 2 tbsp
  • Oil ½ cup
  • Crushed garlic 1 tbsp
  • White cumin seeds 1 tsp
  • Tomatoes 2 chopped
  • Crushed red pepper 1 tsp heaped
  • Roasted and crushed cumin 1 tsp
  • Allspice 1 tsp
  • Chili sauce 1 tbsp
  • Soya sauce 1 tbsp
  • Butter 2 tbsp
  • Cream 2 tbsp
  • Pinch of zarda color
  • Grated cheddar cheese 3 tbsp
  • Coriander leaves chopped 2 tbsp
  • Green chilies 2 chopped
Method
  • Boil together 1 large onion, turmeric, chili powder, 2 tomatoes, 2 tbsp ghee and 2 tbsp curd with 2 cups of water, cook for 15 minutes when onion tender, blend and keep aside. Heat oil in a handi, add crushed garlic and white cumin seeds, when light brown add blended onion mixture, add in above onion mixture with 2 extra chopped tomatoes and fry well. Add crushed pepper, crushed cumin, salt, fry well add boneless chicken ½ kg, cover and cook till chicken tender, lastly add allspice, chili sauce, soya sauce, butter, cream, yellow color, grated cheese, leave it on dum, lastly add chopped coriander and green chilies.

Chicken Lasagne

Chicken Lasagne
 

Ingredients
  • Chicken Boneless (cut into cubes) 300g
  • Capsicum Medium (cut into cubes) 1 pcs
  • Carrot Medium (cut into cubes) 1 pcs
  • Onion Medium (cut into cubes) 1 pcs
  • Cheddar Cheese (grated) 1 ½ cup
  • Garlic (chopped) 1 tbsp
  • Milk 3 cups
  • Cooking Oil 6 tbsp
  • Salt 1 tbsp
  • Bake Parlor Lasagne and White Sauce Mix Sachet (inside the pack)
Method
  • Boil pasta in salted boiling water for 5-7 minutes or till tender. Rinse under cold running water. Drain. Add 1 tbsp of oil to pasta, mix well and arrange the sheet straight on a plate and set aside.In a pan, add remaining oil on medium heat and add garlic. Fry for a minute.Add chicken and fry for 5 minutes. Add Bake Parlor Spice Mix Sachet along with vegetables and cook for 2 minutes on high heat. Remove and set aside.In a bowl, add 3 cups of milk and add white sauce sachet and cook on medium heat, while continuously stirring till the sauce thickens. Remove and set aside. Now in an ovenproof dish, first layer half of the chicken and vegetable mix and level then 1/3 of the white sauce, 1/3 of grated cheddar cheese and then the pasta sheet. Make sure there are no gaps in between the sheets. Repeat the same process again. On the top of pasta layer, spread the remaining white sauce covering the pasta. Spread remaining cheese on top. Preheat the oven on high for 15 minutes. Place the dish in the centre of the oven and bake for 15 minutes. Remove and serve hot.

Ingredients for Pizza Dough
  • Flour 2 cups
  • Salt ½ tsp
  • Sugar 1 tsp
  • Egg 1
  • Oil ¼ cup
  • Instant Yeast 1 ½ tsp
  • Luke Warm Water to knead
Ingredients for Filling
  • Chicken Boiled and Shredded 1 cup
  • Pizza Sauce 2 tbsp
  • Capsicum Finely Chopped 2 tbsp
  • Sweet Corn 2 tbsp
  • Oregano Leaves 1 tsp
  • Pickled Cucumber Chopped 1 tbsp
  • Cabbage Finely Chopped 1 tbsp
  • Cheddar Cheese Grated 1 cup
Method
  • Knead altogether into a soft dough, leave to rise until double, punch dough, make into balls, stuff with pizza filling, dip in egg, roll in crumbs and deep fry.
Method for Filling
  • Mix altogether in a bowl stuffed in pizza doughnut.
