Hot and sour soup

Hot and sour soup


Ingredients
  • Chciekn 1 breast thinly sliced
  • Prawns 6 to 8 chopped
  • Stock 6 cups
  • Bean sprouts ½ cup
  • Bean curd 1 cut into tiny cubes
  • Cabbage finely sliced 4 tbsp
  • Carrots finely chopped 3 tbsp
  • Coriander laves 2 tbsp
  • Soya sauce 2 tbsp
  • Chili sauce 1 tbsp
  • Salt 1 tsp
  • Sugar 1 tsphaepd
  • Ketchup ½ cup
  • White vinegar ½ cup
  • Egg 1
Method
  • Marinate chicken and prawns with salt, white pepper, and corn flour 1 tsp, boil stock add in marinated chiken and prawns with salt, white pepper ½ tsp and chopped vegatables cook for 10 minutes then add soya sauce, chili sauce, ketchup and vinegar, thicken soup with corn flour paste, lastly add beaten egg, remove add lastly add coriander leaves.

Method
  • Marinate 1 chicken breast and 6 to 8 chopped prawns with 1 tsp salt, white pepper, and corn flour 1 tsp, boil 6 cups stock add in marinated chicken and prawns and chopped vegetables cook for 10 minutes then add 2 tbsp soya sauce, 1 tbsp chili sauce, ½ cup ketchup and ½ cup vinegar, thicken soup with corn flour paste, lastly add 1 beaten egg, remove add lastly add 2 tbsp coriander leaves.

Tomato Corn Soup

Tomato Corn Soup


Ingredients
  • Chicken stock 6 cups
  • Tomato puree 1 cup
  • Salt 1 tsp
  • Black pepper ½ tsp
  • Soya sauce 2 tbsp
  • Sugar 2 tbsp
  • Sweet corn 1 tin
  • Egg 1
  • Corn flour ½ cup dissolved in ½ cup water
  • Ketchup 4 tbsp
  • Pinch of orange red color
Method
  • Mix together tomato puree, stock, all the seasonings, corn, cook for 15 minutes till boiling, thicken soup with corn flour paste, and lastly add beaten egg.

Mulligatawny soup


Ingredients
  • Onions chopped 2 tbsp
  • Butter 2 tbsp
  • Gram flour roasted 4 tbsp heaped
  • Chili powder 1 tsp
  • Tomato 1 finely chopped
  • Salt 1 tsp
  • Bay leaf 1
  • Curry leaves 15
  • Vinegar ¼ cup
  • Ginger garlic ½ tsp heaped
  • Turmeric 1 tsp
  • Stock 4 cups
  • Lemon juice 1 tbsp
Method
  • Heat butter, fry onion light golden add ginger garlic paste with chopped tomatoes and fry well, add vinegar, chili powder, turmeric, salt, bay leaf, add stock and curry leaves, make paste with gram flour and little water add to the soup stirring continuously, let the soup cook till the right consistency, remove from fire add lemon juice, strain the soup, before serving put few pieces of boiled shredded chicken, 4 tbsp boiled rice, pour soup over it, serve hot with lemon slices

Schezawan soup


Ingredients
  • Mince meat ½ cup
  • Chicken julienne ½ cup
  • Prawns 8 to 10
  • Mushrooms sliced 4
  • Capsicum finely chopped ½ cup
  • Chicken stock 8 cups
  • Salt 1 tsp
  • White pepper ½ tsp
  • Soya sauce 2 tbsp
  • Chili sauce 2 tbsp
  • Vinegar 2 tbsp
  • Egg 1 beaten
  • Coriander leaves 2 tbsp
  • Spring onion leaves 2 tbsp
  • Corn flour ½ cup, mixed with ½ cup
Method
  • Marinate mince meat, chicken julienne and prawns with salt, white pepper ¼ tsp each, soya sauce 1 tsp, put chicken stock in a pan, when boiling, add your marinated meet, mushrooms with all the seasonings, capsicum, cook till boiling, lastly add beaten egg, thickens the soup with corn flour, garnished with chopped coriander leaves 2 tbsp, spring onion leaves 2 tbsp finely chopped.
