Sweet potato salad

Sweet potato salad



Ingredients
  • Potato peeled, cubed and boiled 2 cups
  • Pineapple 1 cup
  • Sweet corn ½ cup
  • Capsicum ½ cup tiny cubes
  • Salt ½ tsp
  • Black pepper ½ tsp
  • Caster sugar 2 tbsp
  • Cream 2 tbsp
  • Mayonnaise 4 tbsp
Method
  • Mix all together serve chilled.

Fruit jell-o salad

Fruit jell-o salad


Ingredients
  • Curd cheese 1 cup
  • Pineapple tidbits 1 cup
  • Pineapple jelly 1 packet
  • Fruit cocktail 1 cup
  • Cream 1 cup chilled
Method
  • Beat cream add pineapple jelly crystals, curd cheese and fruits, mix well and serve chilled.

Italian corn and macaroni salad


Ingredients
  • Macaroni boiled 1 ½ cup
  • Sweet corn ½ cup
  • Cucumber 1 cut into tiny cubes
  • Capsicum 1 cut into tiny cubes
  • Pineapple ½ cup
  • Salt ½ tsp
  • Black pepper ½ tsp
  • Sugar 1 tbsp
  • French dressing 5 tbsp
Method
  • Mix all together serve chilled.

Sunshine pudding

Sunshine pudding


Ingredients
  • Coconut macrons 250 gm
  • Pineapple 1 tin
  • Gelatin 1 tbsp leveled
  • Milk 2 ½ cups
  • Corn flour 2 tbsp
  • Cream whipped 300 gm
  • Sugar ½ cup
  • Yellow color few drops
  • Pineapple essence ½ tsp
Method
  • Take milk in a pan, mix in corn flour, sugar, cook till thick. Add in dissolved gelatin, fold in 200 gm of whipped cream.
To assemble
  • In a rectangular dish spread coarsely crushed macrons, top with pineapple tidbits, prepared custard, decorate with whipped cream, pineapple slices and cherries. Serve chilled.

Pineapple butter scotch trifle


Ingredients for custard
  • Milk 1 liter
  • Sugar ½ cup
  • Vanilla custard powder 4 tbsp
  • Pineapple puree 1 cup
  • Condensed milk 4 tbsp
  • Cream ½ cup
For pineapple layer
  • Pineapple cubes 1 cup
  • Pineapple jelly 1 packet
Ingredients for butter scotch sauce
  • Butter 2 ounces
  • Brown sugar ½ cup
  • Cream ½ cup
  • Butter scotch essence few drops
Method
  • Prepare custard. Cool, add condensed milk, pineapple puree and cream, cook all ingredients for butter scotch sauce in a sauce pan till thick, remove and cool.
To assemble
  • Spread a layer of custard in the bottom of desert bowl then thick layer of pineapple chunks, drizzle butter scotch sauce over it, cover with pineapple jelly chunks, repeat layer, serve chilled.

Frozen Salad Mould


Ingredients
  • Potato (cubed and boiled) 1 cup
  • Carrot cubed and boiled ½ cup
  • Peas boiled ½ cup
  • Cucumber (peeled and cut into cubed) 2
  • Fruit cocktail 1 medium tin
  • Mayonnaise ¾ cup
  • Fresh cream 1 cup
  • Castro sugar 2 tbsp
  • Salt 1 tsp
  • White pepper ½ tsp
  • Gelatin powder 1 tbsp
  • Pineapple jelly 1 packet
  • Water 1 cup
Method
  • Dissolve jelly and gelatin in 1 cup water. Mix in it mayonnaise, cream, salt, pepper, sugar, all vegetables, fruit cocktail, mix all well. Pour mixture in a jelly mould. Set for 4 hours till firm. Over turn serve decorated on bed of salad leaves

Ingredients
  • Pineapples ½ cup
  • Coconut Milk 1 cup
  • Vanilla Ice cream 4 scoops
  • Fresh Coconut Malai 1 cup
  • Pineapple Juice 1 ½ cup
  • Crushed Ice 1 cup
  • Vanilla Ice creams 4 scoops
  • Sugar 2 tbsp
  • Blue Color few drops
Method
  • Put all together in blender and blend, serve garnish with pineapple and cherries.

Pineapple upside down salad mould


Ingredients
  • Pineapple slices 1 can undrained
  • Cherry halves 6
  • Pineapple jelly 1 packet dissolved in ¾ cup water
  • Cream cheese 4 tbsp
  • Curd cheese 4 tbsp
  • Mayonnaise 4 tbsp
  • Cream 4 tbsp whipped
  • Gelatin 2 tbsp dissolved in pineapple syrup ¼ syrup
  • Sugar 2 tbsp
  • Salt ½ tsp
  • Pineapple tidbits ½ cup
  • Fruit cocktail 1 cup
Method
  • Grease your mould very well with oil, fix with pineapple and cherries, dissolve cherries in ¾ water, pour on top of pineapple slices, beat together cream, curd cheese, cream cheese, mayonnaise and cream, fold in pineapple fruit cocktail, sugar, salt, dissolve gelatin, mix all well, pour on top of set jell-o, freeze till done, over turn and serve.

Pineapple Upside Down Pudding


Ingredients
  • Egg yolks 3
  • Sugar 3 ounces
  • Fresh cream whipped 8 ounces
  • Gelatin powder 3 tsp
  • Water ¼ cup
  • Milk 1 cup
  • Yellow food color few drops
  • Pineapple essence ½ tsp
  • Pineapple slices few
  • Cherries 6 to 8
Method
  • Dissolve gelatin in ¼ cup water, mix egg yolks with sugar and milk, cook on low flame, stirring continuously, do not boil, remove from fire add in essence, colors and dissolve gelatin, cool mixture, fold in the whipped cream, in greased glass pie dish, put rings of pineapple on the base and sides, put cherries in the whole, pour mixture on the pineapple slices, allow to set for 2 hours, over turn before serving.

Honeyed pineapple chicken

Honeyed pineapple chicken


Ingredients
  • Boneless chicken ½ kg cubes
  • Salt ½ tsp + ½ tsp
  • White pepper ½ tsp + ½ tsp
  • Corn flour 1 tbsp + 1 tbsp
  • Egg white 1
  • Capsicum 1 cut into cube
  • Carrots 1 cut into small cubes
  • Onion 1 cut into small cubes
  • Crushed garlic 1 tbsp
  • Oil ¼ cup
  • Honey 2 tbsp
  • Soya sauce 1 tbsp
  • Pineapple chopped 1 cup
  • Green onion 2 thinly sliced
  • Chicken stock 1 cup
Method
  • Marinate chicken with salt, pepper, corn flour and egg white for 15 minutes and deep fry, heat oil add crushed garlic with all the vegetables, seasonings, sauces and stock, cook till boiling add pineapples, fried chicken, lastly thickens the sauce with corn flour paste and chopped spring onion.
