Mayo chicken crockets

Mayo chicken crockets
 

Ingredients
  • Boneless breast ½ kg chopperized
  • Green chilies 4
  • Salt 1 tsp
  • Black pepper 1 tsp
  • Mustard paste ½ tsp
Ingredients for filling
  • Carrot 1
  • Peas boiled 2 tbsp
  • Sweet corn 3 tbsp
  • Mushrooms 4 chopped
  • Salt and pepper ¼ tsp each
  • Cheddar cheese grated ½ cup
  • Mayonnaise 2 tbsp
  • Coriander leaves chopped 2 tbsp
  • Green chilies 2 finely chopped
  • Spring onion leaves finely chopped 2 tbsp
  • Eggs beaten 2
  • Bread crumbs as required for coating
Method
  • Chopperize chicken breast with green chilies, salt, pepper, mustard and keep aside.
Method for filling
  • Finely chopped all the vegetables, boil carrots and peas, mix with grated cheese, mayonnaise, salt and pepper, chopped green masala, mix well. Mixture should be thick. Take mince chicken mixture in your hand, flatten very thinly, fill in vegetable mixture, made into oblong shape, dip in beaten egg, roll in bread crumbs, chill for 30 minutes before frying, deep fry on low flame. Serve hot.

Popcorn Shrimps

Popcorn Shrimps


Ingredients
  • Shrimps cleaned 250 gm
  • Salt, pepper, paprika, mustard powder all 1 tsp each
Ingredients for batter
  • Self raising flour ½ cup
  • Salt ½ tsp
  • Egg 1 beaten
  • Milk ½ cup or as required
  • Oil 1 tbsp
  • Extra self raising flour as required to roll shrimps
Method
  • Marinate shrimps with salt, pepper, paprika and mustard powder for 30 minutes, dip in prepared batter, roll in self raising flour, deep fry for 10 minutes till light golden.

Cream Filled Cupcakes

Cream Filled Cupcakes
 

Ingredients:
  • 1¼ cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup white sugar
  • 1 egg
  • 1 egg white
  • 4 tablespoons butter, melted and cooled
  • ⅓ Cup buttermilk
  • 2 teaspoons vanilla bean paste
Method:
  • Heat the oven to 175C and line a 12 cup muffin pan with paper liners.In a medium bowl combine the flour, baking powder, baking soda, and salt. Whisk until well blended.In a small bowl cream together the butter and sugar until well combined and lighter in color. Add the eggs and whisk until completely incorporated into the butter mixture. Whisk in the buttermilk.Pour the wet ingredients over the dry and whisk until just combined and no large lumps remain. Scoop the batter into the prepared pan and bake for 18 to 22 minutes, or until the cakes spring back when pressed gently in the center.Allow the cakes to cool in the pan for five minutes then carefully transfer them to a wire rack to cool completely.Once the cakes are cooled completely, take a small paring knife and poke it into the center of the cupcake in a cross pattern about 1 inch deep. Take the pastry bag and place the tip into the cross and pipe in about one tablespoon of filling, or until the filling just starts to come out of the hole. Clean off the tops of the cupcakes before frosting.In a medium bowl combine the Swiss butter cream and vanilla bean paste. Whisk to combine. Frost the cupcakes as desired.

Star nuggets

Star nuggets



Ingredients
  • Chicken mince made with 2 chicken breast and boneless leg 250 gm
  • Paprika ½ tsp
  • Salt 1 tsp heaped
  • Mustard ½ tsp
  • Black pepper 1 tsp
  • Garlic 1 tsp
  • Vinegar 1 tbsp
  • Bread slices 4 made into crumbs
  • Egg 1
Method
  • Mix all the above in chicken mince except eggs and bread crumbs and keep for 30 minutes, make into star nuggets with star shape cutter, dip in beaten egg, and coat well in crumbs and deep fry in frying pan. Serve immediately.
