Deep-Fried Semolina Savories |
1 cup semolina
1 cup boiling water
1 small onion, finely chopped
1 fresh green chili, seeded and chopped finely
1/2 teaspoon fresh ginger, grated finely
Salt to taste
1/2 teaspoon cumin, ground
1 teaspoon fresh cilantro leaves, chopped finely
Oil for deep frying
Fill a bowl with the boiling water and add the semolina. Stir with a wooden spatula. Mix in all the other seasonings. The dough should not be dry but stiff. Take a tablespoon of the dough, roll into a ball and flatten to make a circle about 3 inches across. Make a hole in the center of the dough like a doughnuts.
Heat up a wok with the oil. Fry the holed and flattened dough until golden. Turn to fry on the other side. Best to serve warm.
