Crispy chili beef (serves 6)


Ingredients
  • Undercut thinly sliced ½ kg
  • Salt ½ tsp
  • White pepper ½ tsp
  • Egg 1
  • Corn flour 2 tbsp
  • Sesame seeds 2 tsp heaped
  • Chili oil 2 tbsp
  • Oil ¼ cup
  • Crushed garlic 1 tbsp
  • Chili garlic sauce 2 tbsp
  • Wooster shier sauce 1 tbsp
  • Oyster sauce 2 tbsp
  • Spring onion 3 sliced into 1 inch pieces
  • Green chilies 6 thinly sliced length wise
Ingredients for batter
  • Flour ¼ cup
  • Corn flour 2 tbsp
  • Baking powder ½ tsp
  • Egg 1
  • Oil 2 tbsp
  • Chilled water to make batter
Method
  • Marinate ½ kg thinly sliced undercut with ½ tsp salt, ½ tsp white pepper, 1 egg, 2 tbsp corn flour, 2 tsp sesame seeds, 2 tbsp chili oil, and prepared batter, mix well, deep fry for 10 minutes till crisp and brown.
Method for batter
  • In a bowl mix together ¼ cup Flour, 2 tbsp Corn flour, ½ tsp Baking powder, 1Egg, 2 tbsp Oil, and Chilled water and make into a medium consistency batter.
Method for gravy
  • Heat ¼ cup oil add 1 tbsp crushed garlic, fry till light golden, add in the fried beef with 3 sliced spring onion, 6 green chilies sliced and 2 tbsp oyster sauce, 1 tbsp Wooster sauce, 2 tbsp chili garlic sauce, toss well and remove.

Bheja fry

Bheja fry


Ingredients
  • Beef brain 2
  • Turmeric ½ tsp
  • Water 1 cup
  • Onion 2 chopped
  • Tomatoes 4 chopped
  • Yogurt ½ cup
  • Dry fenugreek leaves 1 tbsp
  • Salt 1 ½ tsp
  • Chili powder 2 tsp
  • Ginger garlic paste 1 tbsp
  • Crushed cumin 1 tsp
  • Crushed coriander 1 tsp
  • Green chilies 4 chopped
  • Coriander leaves 2 tbsp chopped
  • All spice ½ tsp heaped
  • Oil ¾ cup
Method
  • Boil brain in cup water with turmeric, for 10 minutes, remove brain from water, cool and remove veins, heat oil fry chopped onion till light golden, add ginger garlic paste with tomatoes, salt, chili powder, cumin, coriander and fry well add boiled brain, cover and cook for 10 minutes, open add yogurt, and keep frying brain till properly mashed add chopped coriander leaves, green chilies, all spice and dry fenugreek leaves, cover and leave it on dum for 10 minutes.

Beef teriyaki

Ingredients
  • Beef ½ kg (cut into juliennes)
  • Salt ½ tsp
  • Chinese salt ½ tsp
  • White pepper ½ tsp
  • Oil ¼ cup
Ingredients for teriyaki sauce
  • Bones of 1 chicken
  • Ginger 4-6 pieces
  • Garlic 15 cloves
  • Kikkoman sauce 1cup
  • Sugar 1cup
  • Corn flour 2tbsp
  • Water ½ cup
Method:
  • Cook all the above ingredients of sauce together until the half quantity remains.Strain and the simmer for a few minutes and then thicken with corn flour paste.Teriyaki sauce is ready.In another pan take ¼ cup cooking oil and stir fry the marinated beef for about 10 minutes.When tender add the sauce to it. Mix well and serve. Garnish with spring onions.

Malai kabab

Ingredients
  • Undercut long pasanday ½ kg
  • Ginger garlic paste 1 tsp
  • Ripe papaya grinded 1 tbsp heaped
  • Green chilies 1 tsp grinded
  • Coriander leaves 2 tbsp grinded
  • Mint leaves 12 grinded
  • Salt 1 tsp
  • Malai ½ cup
  • Eggs 2 separated
  • Wheat flour as required to roll kababs
  • Oil for frying
Method
  • Grind together green chilies, coriander and mint, marinate beef with ginger garlic, grinded green paste, rip papaya, salt and malai for 1 hour, put the kababs on wooden skewers, press firmly around the skewers to give shape of long kabab. Roll in wheat flour, dip in stiffly beaten eggs, and shallow fry in oil for 10 minutes on low flame.

Rajhistani beef with chili

Rajhistani beef with chili


Ingredients
  • Undercut ½ kg thinly sliced
  • Oil ½ cup
  • Ginger garlic 2 tsp
  • Chili powder 1 tsp
  • Turmeric ¼ tsp
  • Tomato puree 2 tbsp
  • Hoisen sauce 2 tbsp
  • Yogurt 4 tbsp
  • Salt 1 tsp
  • Cumin roasted and crushed 1 tsp
  • Ginger julienne 1 tbsp
  • Green chilies 6 cut into fine julienne
  • Capsicum 1 julienne
Method
  • Heat oil add ginger garlic paste with undercut julienne, fry for 5 minute. Add all the dry seasonings with tomato puree, yogurt and Hoisen sauce. Cover and cook for 10 minutes. Lastly add julienne of green chilies and ginger, capsicum. Toss well and serve with rice.

Ingredients for kabab
  • Beef mince ½ kg
  • Onion 1 raw grinded
  • Salt 1 tsp
  • Ginger 1 tbsp heaped
  • Black pepper 1 tsp
  • Allspice 1 tsp
  • Baking powder ¼ tsp
  • Baby tomatoes 12
  • Small baby onion 12
  • Butter 2 ounces
Ingredients for saffron rice
  • Sela rice 250 gm soaked for 1 hour
  • Black cumin seeds ½ tsp
  • Cloves 6
  • Green cardamom 4
  • Zarda color ¼ tsp
  • Salt 1 tbsp
  • Saffron ¼ tsp
  • Kewra water 1 tsp
  • Butter 2 tbsp
Method for kabab
  • Chopperize together mince, raw onion grinded, salt, ginger, allspice, black pepper and baking powder until smooth, make into small oval kababs and pan fry then give dum of coal. Slightly roast on a grill pan tomatoes and onion, serve with chelo kabab and saffron rice.
Method for rice
  • Boil rice with yellow color, whole spices and salt, drain. Put in a pan with butter, saffron and Kewra, leave it on dum for 10 minutes, serve with chelo kabab.

Ingredients
  • Beef pasanday ½ kg
  • Ginger garlic 1 tbsp heaped
  • Brown onion crushed 2 tbsp crushed
  • Allspice 1 tsp leveled
  • Crushed red pepper 1 tsp
  • Chili powder 1 tsp
  • Roasted gram grinded 2 tbsp
  • White cumin roasted and crushed 2 tsp
  • Coriander roasted and crushed 1 tbsp
  • Salt 1 tsp heaped
  • Yogurt ½ cup
  • Raw papaya grinded 1 tbsp
  • Onion rings for garnishing
  • Oil ½ cup
  • Coriander and mint leaves for garnishing
Method
  • In a bowl mix yogurt with all the above ingredients Ginger garlic 1 tbsp heaped, Brown onion, crushed 2 tbsp crushed, Allspice 1 tsp leveled, Crushed red pepper 1 tsp, Chili powder 1 tsp,, Roasted gram grinded 2 tbsp, White cumin roasted and crushed 2 tsp, Coriander roasted and crushed 1 tbsp, Salt 1 tsp heaped, Yogurt ½ cup, Raw papaya grinded 1 tbsp and marinate your pasanda in this mixture for 2 hours. Heat oil add marinated pasandas, cook till done and thick masala left. Serve garnish with onion rings and greens.

Ingredients
  • Beef Mince ½ kg (do not wash)
  • Onion 1 sliced
  • Poppy Seeds 1 tbsp
  • Desiccated Coconut 1 tbsp
  • Roasted Gram 2 tbsp
  • Ginger Garlic 1 tbsp
  • Salt 1 tsp
  • Chili Powder 1 tsp heaped
  • All spices 1 tsp
  • Kachri Powder 1 tsp
Method
  • Grind together mince and onion very finely in chopper, keep aside. Dry grind poppy seeds, coconut and roasted gram and add to the mince with all the rest ingredients and grind once again, make into kababs and shallow fry. Keep the coal on simmer.

Beef Stick


Ingredients
  • Beef Pieces 1/2 kilo
  • Cumin Seeds 1 tbsp
  • Red Chili Powder 1tbsp
  • Poppy Seeds 1 tbsp
  • Black Pepper Powder 1 tsp
  • Crushed Papaya 1 tsp
  • Salt to taste
  • Yogurt 1 tbsp
  • Oil 1 tsp
  • Ginger/Garlic Paste 1 tbsp
  • Eggs as required
  • Breadcrumbs as required
  • Oil for frying
  • Wooden skewers
Method:
  • Cut the beef in small pieces. Mix all masala with oil and yogurt. Rub the beef botis evenly with this masala marinate for at least 1/2 hr. Than skewer the botis. coat with bread crumbs. Beat the eggs well dip the skewers in it and deeep fry it.

Dum K Fried Kababs
 

Ingredients
  • Boneless Beef ½ kg
  • Ginger Garlic 1 tbsp
  • Green Chilies (grinded) 1 tbsp
  • Whole Red Chilies 8
  • Whole White Cumin 1 tsp
  • Salt 1 tsp
  • Water 2 cups
  • Potatoes (boiled and mashed) 1 cup
  • Suree Chili Sauce 3 tbsp
  • Suree Soya Sauce 1 tbsp
  • Chat Masala 1 tsp
  • All Spices ½ tsp
  • Black Pepper ½ tsp
  • Onion (finely chopped) 1 cup
  • Coriander Leaves (chopped) 3 tbsp
  • Green Chilies (chopped) 4
  • Eggs 2
  • Bread Crumbs as required
Method

  •  In a pressure cooker, add boneless beef with ginger garlic, grinded green chilies, whole red chilies, cumin seeds, salt and water. Cook till tender and dry, cool beef and chopperize. Then add in it mashed potatoes, chili sauce, soya sauce, chat masala, all spice, black pepper, chopped onion, chopped hara masala, egg 1. Mix well. Make into patty shaped kabab. Dip in egg and bread crumbs and deep fry.

Crock-Pot Meatballs Stroganoff

Dinner doesn't have to be a big production every 
night. Sometimes when I know we'll be having a
  busy day, a little planning ahead assures we'll 
have something good to eat when
 we're tired and the day's work is done.
I usually have all the ingredients in the house, 
so this is a good last minute dinner idea.
 Weighed out 1 lb. of meatballs from a larger bag,
 or just use a 1 lb bag. 
I buy these when they are buy one get one free
 Combine soups, vegetables, and seasonings
 in the crock pot bowl.
 Stir until well mixed.
Dump in the frozen meatballs and stir to coat. 
 Cover and cook on low for 6 hours.
 Stir in the 1 C sour cream and let it heat while 
you cook the noodles and make a salad.
Dinner is served!
 It's time to relax and enjoy, realizing how little
 work you had to do. Serve over cooked flat 
noodles. Add a salad or green vegetable.

Crock Pot Meatballs Stroganoff
1-lb bag frozen meatballs
1 can cream of mushroom soup
1 can beef broth
1/2 chopped onion
1/2-1 C mushrooms, big chop - or 1 can
1 T Worcestershire sauce
1 t tarragon (if you have it)
1/4 t pepper
1 C sour cream
Combine the soup, onion, mushrooms, tarragon
and pepper in the crock pot. Mix well. Add
the meatballs and stir to coat.Cover and cook
on low for 6 hrs. Stir in the sour cream and
heat for 10-20 minutes while you cook the
noodles.   Serves 4

Ingredients for beef patty
  • Mince beef 250 gm
  • Ginger garlic paste 1 tsp heaped
  • Salt 1 tsp
  • Black pepper 1 tsp
  • Paprika powder ½ tsp
  • Mustard powder ½ tsp
  • Oregano grinded ¼ tsp
  • Thyme grinded ¼ tsp
  • Egg half to 1 beaten
  • Fresh bread crumbs 1 cup
  • Cream 2 tbsp
  • Iceberg salad as required
  • Cheese slices 2
  • Tomatoes slices 2
  • Onion rings 2
  • Burger buns 2
  • Jalapeño chilies slice 4
  • Thousand Island dressing 4 tbsp
Method
  • Marinate beef with ginger garlic paste, salt, black pepper, paprika, mustard powder, oregano, thyme, egg, bread crumbs and cream, mix well, make into patty, grill in 2 tbsp oil, heat burger buns, spread with butter, salad leaves, tomato, onion rings, patty, cheese slice, jalapeño sliced, topped with thousand island dressing, serve with loads of fries.

Ingredients
  • Mince beef 400 gm
  • Salt 1 tsp
  • Chili powder 1 ½ tsp heaped
  • Onion 1 chopped
  • Ginger garlic paste 1 tbsp
  • Brown onion 2 tbsp
  • Allspice 1 tsp
  • Poppy seeds grinded 1 tbsp
  • Roasted gram grinded 1 tbsp
Ingredients for curry
  • Yogurt ½ kg
  • Gram flour 8 tbsp
  • Turmeric powder 1 tsp
  • Whole red chilies 6 to 8
  • Curry leaves 25
  • Salt 1 tsp
Ingredients for pakoras
  • Gram flour 1 cup
  • Salt ½ tsp heaped
  • Crushed red pepper1 tsp
  • Onion 1 cup chopped
  • Soda by carb ¼ tsp heaped
Method for koftay
  • Put mince in the chopper with salt, chili powder, ginger garlic, brown onion, allspice, roasted gram, poppy seeds and chopperize well, make into kofta and keep aside.In a blender blend raw onions with 1 tsp ginger garlic, salt 1 tsp, coriander powder 1 tsp, chili powder 1 tsp, heat oil ¼ cup fry blended mixture well till oil comes on top, add koftas in this mixture and cook for 10 minutes.
Method for curry
  • Blend yogurt, gram flour, salt, turmeric and chili powder for 1 minute, put it in a pan and cook stirring all the time till thick, now mix kofta mixture in the curry and cook. Make pakoras, add in the koftas in curry, lastly give baghar with whole red chilies, curry leaves, cumin seeds, serve hot.

Dhuan Dhaar Kababs

Ingredients
  • Boneless beef ½ kg
  • Black pepper 1 tsp
  • Salt 1 tsp
  • Corn flour 2 tbsp
  • Potatoes 2 boiled and mashed
  • Soya sauce 1 tbsp
  • Crushed red pepper 1 tsp
  • Ginger garlic paste 1 tbsp
  • Egg 1
  • Onion 1 chopped
  • Oil for shallow frying
Method
  • Cook beef with all the seasonings and 1 cup of water till tender and dry, shred meat and mix in boiled and mashed potatoes, chopped onion, corn flour, chopped hara masala, mix well, give dum of coal, make into kababs and shallow fry.

Hunter Beef Sandwiches

Hunter Beef Sandwiches


Ingredients
  • Hunter beef shredded 200 gm
  • Capsicum 1 finely chopped
  • Onion 1 thinly sliced
  • Jalapeno pepper 8 to 10 slices
  • Crushed red pepper 1 tsp
  • Allspice ½ tsp
  • Salt ¼ tsp
  • Mustard paste 1 tsp
  • Tomato 1 finely cubed
  • Hot dog buns 4
  • Butter and mayonnaise to spread on buns
Method
  • Shred hunter beef, mix with all the given ingredients, spread in toasted hot dog buns, grill till toasted, serve hot.

Ginger Ale Brisket

It doesn't get any easier than this!
Make this a day ahead.
Basically 4 ingredients and it only takes 
2 minutes to get this in the oven.
This really is a no-brainer brisket. 
Lay brisket on a large piece of foil. You may need to
 crease two pieces together because you want 
enough to completely seal in the brisket. Season 
the brisket well with your favorite seasonings. 
I like seasoned salt, pepper, and paprika.
Mix the dry onion soup, ketchup, and ginger ale.
Pour over the brisket and seal the foil tightly.
Pop in a 325º oven for 3-4 hours until fork tender.
Remove the meat and let cool a bit, then put in the
 refrigerator until the next day. This makes
 slicing the brisket easier. Pour the gravy
 into a separate container. 
The next day:
Slice against the grain and put it in a casserole.
Pour the saved gravy over the meat slices.
Cover and pop in the oven until nice and hot.
 Serve the slices and top with gravy.
I have several brisket recipes and I love them all.
It's a yummy, homey, easy dinner.

Ginger Ale Brisket
3-5 lb beef brisket
1 pkg dry onion soup
1 C ketchup
2 C ginger ale
choice of seasoning
Put brisket on large piece of foil that 
will cover the brisket completely.
Put it in a baking dish.
Season brisket well with;
seasoned salt, pepper, paprika.
Mix onion soup, ketchup and ginger ale. 
Pour over the brisket. Tightly close the 
foil, sealing all the seams. 
Bake at 325º for 3-4 hours.
Let cool enough to handle, remove
from the pan, cover and refrigerate.
Store the gravy separately. The next
day, slice the meat against the grain, 
put into a casserole, pour the gravy over
and pop in the oven, covered until 
completely heated through.
