Ingredients :
2/3 cup sugar
1/4 cup water
60 g chick pea flour
1/2 teaspoon almond essence
1/2 teaspoon cardamom, ground
200 g ghee
Heat the water and sugar in a heavy pan over low heat until the sugar dissolves. Then boil for 5 minutes before setting it aside. Sift the chick pea flour. Heat up a heavy based pan with 150g of the ghee. Sloly mix in the chick pea flour to the ghee and fry, stirring for 5 minutes over reduced heat. Add in the syrup, stirring constantly and continue to cook and stir for a further 5 minutes. Add the remaining ghee slowly, keep stirring continuously. Cook the mixture for a further 7-10 minutes after adding the ghee, but do not let it brown. Pour into a greased plate and cut into various shapes before it hardens.
