| Rice Pancakes | 
Ingredients : Makes about 10 small pancakes
1       1/2 cups rice flour
1       1/2 cups plain white flour
2       tablespoons natural yogurt
2       1/2 cups water
Salt to taste
Ghee
Use a bowl and sieve both rice and plain    white flours into it. Add the yogurt mixed with water and salt. Beat    with a wooden spoon to a smooth thicken batter. Set aside in a warm    place overnight or until the yogurt mixture ferments.
Heat a heavy frying pan and grease the    base with a little ghee. Pour in just enough of the batter to cover the    base of the frying pan. The pancake size should be about the size of a    small plate. Cook until it turns golden brown on both sides. Best serve    hot with dry vegetables, sambals and fresh chutneys to make a delicious    meal.
