Vietnamese Chicken Salad by Chef Zarnak |
Ingredients:
2 chicken breasts, boiled and shredded
1 cucumber cut in ribbons
1 onion, finely chopped
Few mint leaves
Few coriander leaves
1 red chilli, thinly sliced
Juice of 1 lemon
1 tbsp fish sauce
1 tbsp brown sugar
1 tbsp peanuts, roasted and chopped
Method:
• In a bowl, mix 2 boiled and shredded chicken breasts, 1 finely chopped onion, 1 thinly sliced red chili, few coriander leaves, few mint leaves and 1 cucumber chopped in ribbons.
• Separately, mix juice of 1 lemon, 1 tbsp. fish sauce, 1 tbsp. brown sugar and pour over on salad. Garnish 1 tbsp. roasted and chopped peanuts before serving.
