Lauki ki Kheer:
Ingredients
Milk 6 cup
Rice (soaked) ½ cup
Bottle guard (grated) 250 gm
Khoya ½ cup
Cardamom powder 1 tsp
Sugar 1 cup
Vanilla custard powder 1 tbsp heaped
Pistachio sliced 2 tbsp
Kewra water 1 tsp
Cardamom powder 1 tsp
Sugar 1 cup

Method
In a pan cook 6 cups milk till it comes to a boil, add in ½ cup soaked rice and cook stirring till rice are tender.
Now add 1 cup sugar, cook till thick.
Slightly steam 250 gm grated bottle guard for 10 minutes, then add to the milk and cook for 15 minutes.
Now add ½ cup khoya, 1 tsp cardamom powder and 1 tbsp custard powder. Cook for another 5 minutes till thick.
Lastly add 1 tsp kewra water, remove in a serving bowl. Garnish with 2 tbsp sliced pistachios and serve.
