Chocolate Cupcakes with Cookies

Chocolate Cupcakes with Cookies
Recipe Of Chocolate Cupcakes with Cookies:

Ingredients:
Dark chocolate 115 gm
Unsalted butter 85 gm
Soft brown sugar 175 gm
Eggs (Separated) 2
Flour 185 gm
Baking powder ¼ tsp
Baking soda ¾ tsp
Salt a pinch
Semi skimmed 250 ml
Vanilla extract 1 tsp

Ingredients For topping:



Oreo cookies 1 packet
Sugar 120 gm
Golden syrup 80 gm
Water 1 - ½ tbsp
Egg whites 2 large
Vanilla extract ½ tsp

Method:
1. Melt Chocolate in microwave. Leave to cool slightly. In a bowl cream butter and sugar together until pale and smooth. Slowly add egg yolk and beat well
2. Now add melted chocolate and beat well. Sift flour, baking powder, soda and salt mix together. Measure milk in a jug and mix vanilla extract. Gradually add alternative amounts of flour mixture and Milk to the chocolate, butter and sugar mixture, beating well after each addition. Beat egg whites stiff until peaks have formed. Carefully fold the egg whites to the batter. Scoop the mixture equally into the cup cake cases and bake it for 15 minutes on 180 degrees.

For Topping
1. Place sugar, Golden Syrup and water in a saucepan on high heat, till mixture reaches soft ball stage for 2 minutes;
2. Whisk the egg whites until its soft peak forms than gradually add sugar mixture , it will become thick and glossy. Add Vanilla extract.
3. This icing is easy to work with when it is warm.
