Chocolate truffle cake


Ingredients for chocolate sponge
  • Eggs 3
  • Sugar 3 ounce
  • Flour 2 ounce
  • Coco powder 1 ounce
  • Baking powder ¾ tsp
Ingredients for filling
  • Eggs 3 separated
  • Milk ½ cup
  • Coco powder 1 tbsp
  • Chocolate grated 1 cup
  • Chocolate kisses 12 to 15 for decoration
  • Gelatin powder 2 tbsp
  • Vanilla essence 1 tsp
  • Whipped cream 1 ½ cup
  • Sugar 5 ounces
Method for cake
  • Beat eggs, gradually adding sugar till light and fluffy, add essence, fold in sieved flour, baking powder and coco mixture, spread batter in a greased 9 inch pan, and bake on 180 degree for 20 minutes.
Method for filling
  • In a sauce pan put milk, coco, egg yolks, chocolate and half sugar, cook till thick, dissolve gelatin in ¼ cup water, add to this mixture, beat cream and add to the cooled custard, beat egg white adding in remaining sugar and fold in the mixture, mix all lightly, pour on the cake and leave to set, removed decorate the cake with chocolate kisses and whipped cream.
