Vanilla Glazed Doughnuts
Ingredients for dough
- Milk ¾ cup
- Unsalted butter 3 ounces
- Flour 3¼ cup
- Fine sugar 3 ounces
- Salt ½ tsp
- Instant yeast 2 ½ tsp
- Eggs 2
- Vanilla ½ tsp
- In a sauce pan combined milk and butter, heat until butter melted, remove from heat, in a mixing bowl combine 2 ½ cup flour, sugar, salt and yeast and beat on low speed to mix add the hot milk mixture, raise the speed to medium and beat until well blended, add the eggs and vanilla and beat until mixed about 2 minutes, add remaining ¾ cup flour and beat until the dough is smooth about 1 minute. Remove place dough in a greased bowl, leave to rise in a warm place until double about 45 minutes, roll the dough into a circle, cut with round doughnut cutter, transfer the doughnut and holes to the greased sheet, cover the doughnut with a clean towel and rise till puffy until 30 minutes. Deep fry doughnut 2 to 3 at a time until golden, turn and cook the second side, when the doughnuts are still warm dip all the sides in vanilla glaze, place on a wire rack until the glaze set.
- Unsalted butter 6 tbsp
- Icing sugar 2 ½ cup
- Vanilla essence ½ tsp
- Hot water 5 tbsp or more if required
- In a bowl whisk together melted butter, icing sugar, vanilla and 5 tbsp hot water until smooth add 1 tbsp hot water more if required, the glaze should be thin, use immediately.
