Spicy Roast Potatoes
Ingredients:
- Potatoes peeled and quartered 750grams
- Tomato Chopped 2
- Onion Diced ½
- Turmeric ½ tsp
- Chili powder 1 tsp
- Cumin ground 1 tsp
- Garlic paste 1 tsp
- Butter Cubed 50 grams
- Coriander Chopped to garnish
- Salt to taste
Method:
- Heat a frying pan with some oil, Add onions and cook until soft. Then add garlic paste and spices to the onions and cook until fragrant. Add chopped tomatoes to the pan and cook until soft and completely broken down. Season with salt to taste. In the meanwhile, cook the potatoes in a big pot of salted water for 10 minutes or more, until tender. Drain the potatoes well and add them to a baking dish. Smash them slightly with a fork to increase surface area and attain more crispiness. Pour the sauce over the potatoes and mix well to coat the potatoes. Place cubes of butter through the potatoes and bake in a preheated, at 200C oven for 15 minutes or until crisp and golden.
