Handi Dum Pukht Pulao
Ingredients
- Rice 300 gm soaked for 30 minutes
- Chicken ½ kg 10 pieces
- Onion 1 chopped
- Ginger garlic 1 tbsp
- Salt 1 tsp
- Cummins seeds 1 tsp
- Allspice 2 tsp
- Red chili whole 6 pieces
- Oil ½ cup
- Add 2 cups water in a pan with chicken, chopped onion, ginger garlic paste, salt, red chilies add 1 tsp allspice, let it cook until chicken is tender and 1 cup stock is left, take out chicken and measure stock.
- Heat oil in a handi, fry 1 chopped onion, add cumin seeds, fry till onion light golden, add ½ tsp ginger garlic, boiled chicken, fry for 5 minutes, add 4 cups of water or stock, cook till boiling, add rice, 1 tsp salt, 1 tsp allspice, cover and cook till done.
