Mud Pie

Mud Pie


Ingredients for short crust pastry
  • Flour 2 cups
  • Chilled butter 5 ounces
  • Salt pinch
  • Egg yolk 1
  • Caster sugar 1 ounce
  • Chilled water to knead
Method for pastry
  • Rub butter into flour with finger tips, add in yolks, mix slightly, add chilled water and mix until the dough comes together, press the dough into a ball, refrigerate for 30 minutes.
Ingredients for filling
  • Chocolate 100 gm
  • Butter 3 ½ ounce
  • Golden syrup 3 tbsp
  • Eggs 3 beaten
  • Granulated sugar 5 ounce
  • Vanilla essence 1 tsp
  • Whipped cream for decoration
  • Chocolate curls or grated chocolate for decoration
Method
  • Roll out the pastry on a lightly floured surface, line a 9 inch pie pan with pastry, prick with fork, bake in a preheated oven 190 degrees for 20 minutes.
Method for filling
  • Melt chocolate with butter and golden syrup on top of a double boiler, remove and vanilla, sugar and eggs, pour the chocolate mixture into the big crust, bake for 45 minutes, until the filling is set, remove and cool completely, decorate with whipped cream and grated chocolate.
