Here is the much awaited roundup of Healing Foods - Banana. I would like to thank Siri of Cooking with Siri for giving me the opportunity to host the event and Pritya books for sponsoring the giveaway. Banana Dates cake:
Ingredients:
All Purpose Flour 1 ½ cups
Baking Powder 3 tea spoon
Salt 1 tea spoon
Baking Soda ½ tea spoon
Very Ripe Bananas 2(large)
Brown Sugar (packed) 1 ½ cups
Eggs 2
Butter 6 table spoon (at room temperature)
Sour Cream 100ml
Chopped Dates ½ cup
Banana extract (optional) 1 tea spoon
Vanilla extract 1 tea spoon
Cinnamon Powder 1 tea spoon
Method:
Sift together the flour, baking powder, baking soda and salt. Keep aside.
Puree the bananas in the blender.
Toss the dates in some of the sifted flour mix.
Beat together the butter and brown sugar until fluffy. Add the eggs one by one, beating after each addition. Add the banana essence, vanilla essence and cinnamon powder. Add the sour cream and banana puree and beat until blended. Fold in the flour mix gently. Now add the dates and fold till well incorporated. Pour the batter into a 23 cm greased and floured cake pan and bake at 180 degree C for about 40 minutes or until done. Sprinkle icing sugar on top or frost with a Philly cream cheese frosting. (Optional).
54. My dear sister Suja, another non-blogger has sent this Banana Strawberry Muffins inspired from Joy of Baking. Here is the recipe in her own words..
Banana Strawberry Muffins
Ingredients:
AP flour - 2 1/4 cups
Light brown sugar - ¾ cup
Baking powder – 1 ½ tsp
Baking soda – ¼ tsp
Ground Cinnamon – 1 tsp
Salt – ½ tsp
Cut strawberries – 1 cup
Unsalted butter – ½ cup
Eggs – 2, large
Vanilla Essence – 1tsp
Banana – 2 large, ripe
Method:
Preheat the oven to 170 degrees C.
Melt the butter and let cool to room temperature.
Mash the bananas using a fork. I used 2 medium sized bananas. Add eggs to a bowl and beat lightly. Now add vanilla essence and mashed bananas to it and whisk together. Add the melted butter and whisk to combine. In another bowl, sift in the flour, light brown sugar, baking powder, baking soda, cinnamon and salt. Fold in the strawberries until they are coated with flour. Now add the egg-banana mixture to this flour mixture. Stir only until the dry ingredients become wet and combine together. Do not over mix. Line a muffin tray with 12 paper cups. Divide the batter equally among 12 cups. Place in the oven and bake for 15 to 20 min or until a skewer inserted comes out clean.
