Arabic kofta
Ingredients
- Mince ½ kg (double machined)
- Onion finely chopped 4 tbsp
- Parsley finely chopped 2 tbsp
- Salt 1 tsp
- Cumin roasted and crushed 1 tsp
- Black pepper ½ tsp heaped
- Garlic paste 1 tsp
- Oil ¼ cup
Ingredients for salsa
- Tomato puree 1 tbsp
- Water ½ cup
- Garlic paste 1 tsp
- Black pepper ½ tsp
- Roasted and crushed cumin ½ tsp
- Salt ½ tsp heaped
- Allspice ½ tsp
- Paprika 1 tsp
- Parsley finely chopped 1 tbsp
Method
- Mix all together in the mince and chopperize well, make into koftas and shallow fry for 10 minutes until done, remove and keep aside. In the left over oil in which we fried kofta add all the ingredients for salsa, fry well. Put kofta in a serving platter, top with prepared sauce and serve hot.
