Tea scones
Ingredients
Cream 1 cup
Sugar 2tsp heaped
Pinch of salt
Butter 2 tbsp
Grated cheddar cheese 3 tbsp
Eggs 3
Desiccated coconut 3 tbsp
Milk ¼ cup
Baking powder 5 tsp
Flour as required to make dough
Method
Beat eggs and cream in a bowl, add sugar, pinch of salt, butter, coconut, baking powder and milk, mix a little, do not over beat, add sufficient flour to make soft scones batter, drop into greased muffins pan, sprinkle grated cheese over each and bake in a pre heated oven on 180 degree C for 15 to 20 minutes.
