Pad Thai Noodles

Pad Thai Noodles


Ingredients
  • Rice noodles 200 gm
  • Chicken breast 1 thinly sliced
  • Carrots 2 cut into strips
  • Beans sprouts 1 cup
  • Capsicum 1 striped
  • Garlic crushed 1 tbsp
  • Onion 1 sliced
  • Green onion 2 cut into 1 inch piece
  • Salt 1 tsp leveled
  • Soya sauce 1 tbsp
  • Roasted peanut coarsely ground 2 tbsp
  • Lemon juice 2 tbsp
  • Oil ¼ cup
Ingredients for sugar syrup
  • Sugar 2 tbsp
  • Water 4 tbsp
  • Thai red curry paste 2 tbsp
Ingredients for sauce
  • Tamarind paste 1 tbsp
  • Fish sauce 2 tbsp
  • Water ¼ cup
Method for tamarind paste
  • In a bowl mix together tamarind paste and fish sauce with ¼ cup water and keep aside. Soak rice noodles for 20 minutes in hot water, drain and keep aside.
Method
  • Heat ¼ cup oil in a wok, add crushed garlic with sliced chicken, cook for 1 minute add the sliced vegetables with red curry paste, salt, pepper, soya sauce, tamarind sauce and sugar syrup, mix in noodles, cook on high flame mix in well, remove in a platter, serve garnish with crushed peanuts.
